Pan Seared Tuna

Preparation Time

Ingredients

(serves 2-4 people)

 

Ingredients for sesame crust:

  • 3 tablespoons sesame seeds (mix of black and white)
  • 1 teaspoon granulated garlic powder
  • 3/4 teaspoon salt
  • 1 teaspoon cracked pepper
  • 1 teaspoon sugar (sub with maple syrup)

Method

  • Mix the ingredients for the sesame crust together in a small bowl
  • Pat the tuna dry on a plate and coat all sides with the soya sauce
  • Generously sprinkle all the sides with the sesame crust mix, pressing it down into the flesh.
  • Heat a skillet over medium heat, until extremely hot. Keep tongs/spatula close by. Add the cooking oil to the pan and let it get hot. Carefully lay the tuna in the pan, pressing it down with the spatula/tongs. Sear for approximately 45-60 seconds (check the underneath by lifting a corner to see if it is golden) Once deeply golden, carefully flip. Sear the other side 60-90 seconds. The idea is to not cook all the way through the tuna (just to get the golden sear on all sides). Sear the sides using the tongs to hold the sides up.
  • Once cooked, place on a cutting board and blot a little. Then slice into thin slices and serve.

You can eat it warm, or refrigerate and serve chilled.
