Ingredients

Big Sam’s Fresh Salmon Poke Cubes (sub Marinated Fresh Salmon Poke Cubes for premarinated)
Big Sam’s Kokuho rice (sub quinoa for gluten free option)
Big Sam’s Japanese Edamame
Big Sam’s Hass Avocados
Cucumber and/or Carrot
Spring onions (green) finely chopped
Big Sam’s Orange Tobiko or Japanese Ikura
Sesame seeds – toasted
For dressing: soya sauce (sub tamari or coconut aminos), lightly toasted sesame oil, ginger, garlic and fresh chillis.

Method

Cook rice or quinoa
Steam the edamame and let it rest
Make a dressing with soya sauce (sub tamari or coconut aminos), sesame oil, ginger and garlic paste and add some fresh chillis or sriracha for spice – set aside
Cut/dice your chosen vegetables
Plate as preferred and serve
